After a long weekend of serious indulgence at my parent’s house in the countryside (flapjacks, chocolate, banana bread etc) I spent the afternoon cooking up my favourite green soup– perfect to nourish the body and get you back on track for a busy week ahead! Serves 2. 150 cal per serving.

Vogue Latin America March
Ingredients: Celery, Broccoli, Half an Onion, Bag of Spinach, Olive Oil, Vegetable stock, Salt and Pepper, Vegetable Stock

Step 1: Add a little olive oil to your pot and finely chop up the onion, add to pot and simmer until soft. Boil kettle and make a litre of vegetable stock

Step 3: Add the fresh spinach to the mix leaving half to add at the last moment to keep in all those raw enzymes!
Step 4: Add your soup to the blender for a quick power blend and add the rest of the spinach. Place back on the stove to keep warm and enjoy!
